Strawberry and mint jam

Let’s keep this short and sweet – like the recipe for this deliciously fresh mint and lemon zest strawberry jam.

My mother is the Queen of Jam and every year we make massive batches of preserves as simple, affordable and delicious seasonal gifts. Lemon zest and mint add a freshness to this strawberry jam you just can’t beat.

STRAWBERRY AND MINT JAM

Makes approximately 15 jars. This recipe uses 5kgs of strawberries, but as long as you keep the ingredients in proportion the flavours will stay the same. 

Ingredients

  • 5kg strawberries, hulled
  • 2.5kgs sugar (make sure to keep the sugar to half the weight of the strawberries)
  • cup chopped mint
  • 3 lemons juiced and zested

Method

Add the sugar and strawberries to a pot, and cook until juicy. Mash with a potato masher to soften the fruit up.

The natural fruit juices will start to come out. Add the lemon and lemon zest and stir in.

Let it cook and thicken.

Stir in the chopped mint, and let it cook and thicken further, then spoon into sterilised jars.

The jam is delicious on scones, toast and between a Victorian sponge.
